Khichadi,  is a traditional dish from the Indian subcontinent that consists of a mix of rice and lentils cooked together with spices and often served with ghee (clarified butter) or yogurt. It is a popular comfort food and is commonly prepared as a one-pot meal.

 

The basic ingredients for khichdi include:

1.       Rice: Typically, a variety of short-grain rice such as basmati rice is used.

2.       Lentils: Usually, yellow split mung beans or red lentils are used. These lentils provide protein and enhance the nutritional value of the dish.

3.       Vegetables (optional): Some variations include vegetables such as peas, carrots, cauliflower, or spinach to make it more nutritious and flavourful.

4.       Tadka (Tempering): The tadka is a mixture of spices and aromatics that are heated in oil or ghee (clarified butter) and added to the cooked mixture

To prepare khichadi , the rice and lentils are washed and soaked for a short time. Then, they are cooked together with water and vegetables until they become soft and the consistency is porridge-like. Finally, a tadka is added to enhance the flavour and richness of the dish. It is typically served hot and can be enjoyed on its own or with accompaniments like yogurt, pickles, or papadums.

 Masala Khichdi Tadka (Tempered Seasoning for Khichdi) is a Ready Tempering used for garnishing cooked Khichdi. It is prepared by heating ghee, adding the spices and aromatics, and sautéing them until they release their flavors and become aromatic. This tempered mixture is then poured over the cooked dish, adding depth of flavor and fragrance to the dish.

Khichdi is highly regarded in Ayurvedic traditions for its nourishing and easily digestible qualities. It is often consumed during times of cleansing, fasting, or as a light meal to support digestion and balance the body.
